La Petite Maison's Bikini – A Recipe

We present an easy take on a drink found on a new drinks list. It's a large-volume premix that is packed with the flavours of a holiday season, making it perfect for hosting a holiday party. Reserve the remaining cordial to use in morning drinks, puddings, or for additional servings of this cocktail.

The Bikini Cocktail

Makes enough for 10 people

To make the Clementine Syrup (yields 750ml)

300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g fine sugar

To make the Cocktail (produces 850ml, to serve 10)

400ml good quality vodka
100ml London dry gin
150ml peach schnapps
200ml citrus syrup (as made above)
Fresh cranberries, to garnish
Mandarin essential oil, to finish

Instructions

To prepare the Syrup: Place all the ingredients into a pan, heat until it reaches a simmer, mixing until the sugar dissolves. Next, take off the stove allowing it to cool down fully. Pour into an sterilised bottle, close it and refrigerate it in the fridge, it can be stored for about four weeks.

Preparing the Premix: Mix the specified liquids into a sizeable container, allow it to infuse for 60 minutes, then pass it through preferably using a fine cloth, to ensure it's completely strained.

To serve: Pour 85ml of your cocktail base into your mixing glass filled with ice, gently stirring gently for a minute to chill. Pour to a cold coupe glass or equivalent, decorate with the cranberries and finish with a light spray with the mandarin essence above the glass.
